SAUSAGE SKILLET CASSEROLE

  • 6-8            Italian sausages
  • 4-6            potatoes cut into 1-2" pieces
  • 1               onion chopped
  • 1 - 2 c       vegetables (your choice) cabbage or green beans or peas etc.
  • 1 - 2c        canned tomatoes or chopped fresh tomatoes

Brown sausages.  When brown cut into 1" pieces.  Add onion, potato and remaining ingredients.  Cover tightly, stirring occasionally.  Ready to serve when potatoes are cooked.  Does not need any seasoning.  If you want to lessen cooking time, partially cook potatoes before adding to sausage.
