Ingredients:
- 4 cups chopped rhubarb
- 1 cup granulated sugar
- 1 pint whipping cream (2 cups)
- 1 white cake recipe
Procedure:
Sift together
- 2 ¼ c flour
- 3 tsp baking power
- 1 tsp baking soda
- ½ tsp salt
- 1 ½ c granulated sugar
Add
- 1/2 c butter
- ¾ c buttermilk
- 1 tsp vanilla
Beat for 1 minute at low speed
Add
Beat for 2 additional minutes at low speed.
Turn into greased and floured 9x13" pan. Dump the chopped rhubarb on top of the cake batter. Sprinkle the sugar on top of the rhubarb. Pour the whipping cream (unwhipped) over the sugar. Bake at 350 for 50-60 minutes until cake springs back when lightly touched.
